Salmon Dijonnaise
 
Yesterday whilst grocery shopping I was looking in the frozen section
for some kind of fish that I can cook quickly in the micro in the
mornings. Jazzy like something between bread for breakfast and I try to
make the filling as healthy as possible. While there I noticed frozen
salmon with a dijon and dill sauce. Can't remember the carb count but it
was quite low.

I had already promised to cook dinner for one son and his girlfriend who
had a very busy day yesterday. I had already purchase 3 pieces of fresh
salmon from the fishmonger so the brain ticked over.... I knew I had a
bottle of Dijonnaise mayo in the fridge so bought some fresh dill.

Mixed an adequate amount of the dijonnaise with snipped dill (I used
plenty as I like the flavour). Topped each piece of salmon with a goodly
amount of the mix and baked the fish until done and still moist.

As a side, I cute up a variety of veggies - broccoli, carrot, red
peppers, red chillies, onion, garlic, purple cabbage, snow peas and
zucchini. I put a them all in an electric frypan and poured a little
water over the top. Steamed them on a low temp until they were just
cooked but still rather crisp. At the last I added 2 teaspoons of a
honey chili dipping sauce :)

It was all quite easy and fast to put together and the fish pan was a
throwaway foil one, so even better ;)

Another good thing is that the mayo sauce did not dry out or run off the
fish. I put a wedge of lemon on my plate and used it, not sure if the
other two did but the lemon did not detract from the great dijonnaise
flavour.

Another good microwaave fish dish is one I devised using some sliced
vegetables like onion, green ro red pepper, and mushrooms. I put them
under adn over the fish fillet(salmon, tilapia, whatever is onsale) and
then use a salsa with teh heat of your choice adn some lemon juice. I
cover and micro until done, which usually depends on the thickness. It is
a nice, low carb, low fat easy dish that cooks up really in minutes
aftertaking about 203 minutes to prepare.

This sounds very much like something my son cooked a few months ago with
white fish. He made everything from scratch, including making guacamole
for the first time, lol. He used the guacamole with corn chips for the
first course (what we call entree). The fish was delicious so thanks for
reminding me ;) From memory he used lime juice though.

I can't stand salmon unless it's raw (as in sashimi) or smoked (as in lox)

Well, we can't all like the same things. I don't care for it raw, but
do like smoked salmon.

Well, there is cold smoked salon and gravlax both essentially raw asn both
considered delicacies. I don't think I would wast either as bait except
to tempt some good looking guy:-)

Probably not. I don't use much soy sauce. When I do use it, I use it
sparingly.
