![]() Mmmm -- the simplest dish there is, and so delicious. Today was declared the official day! Cut a cabbage head in wedges, cut up mutton or lamb meat (a couple of bites per piece), put in a large pot with a handful of black peppercorns, 2 tsp salt. Alternate cabbage and meat, and optionally sprinkle some flour between the layers. Add water, about halfway up the cabbage/meat layers, cook slowly for at least an hour and a half. The cabbage should begin to change color towards brown. Enjoy! And make a big portion, when heated the next day it's even better. You might recognize it as Irish Stew without the extra vegetables.
