More bad news about tilapia
Tilapia has too mealy a texture and I never offer it to clients. I
find it too fragile. |

(She makes the crumbs from good Italian bread.) The texture is actually good and the flavor is nice--mostly due to the high-quality buttered crumbs. Nowadays I only eat tilapia when she cooks it. It does seem that the larger filets are significantly better in texture than the small ones. Or maybe Costco just has better sources than most places... |
