Instead of avoiding the sugar I tend to go for a good quality, expensive
marmalade and have just a small bit on peanut butter toast.... Have it for
brekky on rye sometimes and it is acceptable for me (YMMV of course). I
recently bought a very cheap marmalade for finance's sake and it was almost
all just jelly (jello) with a touch of citrus rind. It also melted very
quickly out of the fridge! I think I will toss it out this weekend.

I regularly use the Splenda-sweetened preserves that are available.
Depending on price and coupon availability, I get Smuckers, Polaner, or
store-brand.

That sounds real good, Ozgirl. I haven't seen it on the supermarket shelves

I use the Apricot Preserves and really like it. I have also had the
strawberry preserves...to me they taste fresher then the regular Smuckers
does. I spread it on hot Ham and cheeses Omelets..really perks up the flavor

Yuck!

I haven't bought any marmalade for years but when I did buy it, it had to be
the good stuff. I used to make pancakes Suzette. My own creation. I made
thin pancakes, then filled with with a mixture of whipped butter mixed with
marmalade. Then topped it with artificially flavored, "light" maple syrup.
Yum! Haven't had that since waaay before diabetes. And really didn't have
it often because I couldn't afford the marmalade. Heh!

Have you ever tasted the regular Smuckers Apricot? It doesn't taste as good
to me as the Sugar free I made some strawberry freezer jam a long while
ago , the Smuckers Sugar free Strawberry Jam tasted as fresh as the homemade
stuff

That's an interesting option. I was thinking of making apricot chicken soon
and hoping my bg would handle it. I do find regular apricot chicken a bit
sweet. I am sure I can find something close to Smuckers apricot here.

No, I haven't had the regular. I've never really been a jam or jelly person,
but I like a bit of sweetness on meat sometimes, and the Smuckers SF apricot
works well there.

I thought I liked the Smuckers sugar free stuff. Until I tasted some real
jam. Now I can't bring myself to eat it. Now I get some unsweetened stuff
from the health food store. I only ever eat it on a peanut butter sandwich
and I don't eat many of those. Seems I get two servings out of the jar
before it starts to go moldy.

Default Sugar-free marmalade


Here's one recipe I have used.
Apricot Chicken

1 cup apricot preserves (sugar free works equally well)
1 tablespoon distilled white vinegar
1 tablespoon brown sugar (Splenda brown sugar also works well here)
1 whole chicken (cut up) or 6 boneless skinless breasts
1 onion, sliced in rings

1. Preheat oven to 350 degrees F (175 degrees C).
2. Place the chicken breasts on top of the onion rings in a 9x13 inch
baking dish. Combine the apricot preserves, vinegar and brown sugar.
Pour the preserve mixture over the chicken, cover and bake for 50
minutes. Remove cover and bake for 10 more minutes.
or
Place onion rings in bottom of crockpot, lay chicken on top of the
onion, pour sauce over top of the chicken. Cook 4 to 5 hours on low.

That's easy enough. Looks like it would feed 6 so the full amount of brown
sugar shouldn't cause me too many problems. The others will have rice, I'll
have lots of veggies.

I find my home made fruit jams (sugar free with artificial sweetener added
on opening the small jar) taste infinitely better than the
smuckers. that goes for strawberry, blueberry, rasberry and blackberry.
I don't make apricot jam so find the Smuckers just fine with that.

Smuckers sugar free lasts quite well in the fridge. My homemade jam gets
put into 4 or 8 oz jars as it has to be consumed pretty quickly , say a
week to 10 days, or it can get moldy in the fridge. Sugar is a
preservative and I use no others as does the Smuckers company.

i think if you want to eat healthily,then eat more fruit and vegetables.
plus,drink more tea,clean water.

I only like the real old fashioned bitter marmalade. I would rather have a
half a teaspoon as a rare treat than eat that faked up junk.
