Carne Deshebrada from Costco
Today would have been the perfect day for a pasta salad. Alas, I have
nothing but the pasta and the dressing. We're having a record heat wave and no way was I cooking. I picked up a package of Carne Deshebrada (shredded beef) from Costco the other day. I heated that up for 6 minutes in the microwave. Served it with baby Yukon Gold potatoes that had been roasted in the crockpot all day, splash of olive oil, salt, pepper and parsley, and green beans straight from the can. Yummy! I had been afraid to try this because I wasn't digesting beef well, but the last few times I had beef, it stayed down. So I am risking it. Hopefully it will work. The meat is very good. Plain. No sauce of any kind. Just the beef. Shows on the package that it can be served in tortillas. 1g of carb per serving. And there is a lot in the package. Doubtful the three of us could eat it all in one sitting. Actually Angela didn't want to eat much. I guess it's the heat. Me? I'm starving and that's really rare. |
