Green beans and potatoes
So somehow there was a screw up with my CSA box this week. I ordered
asparagus (gag) for my husband and instead I got green beans. I was trying to decide what to do with them when I ran across a recipe in a magazine for green beans and potatoes. I don't have the actual recipe before me but it called for baby red potatoes that were cut in chunks and boiled for like 15 minutes, then the beans were put in and cooked for like another 3 minutes or so. This mix was finished as a sauté with some olive oil and basil. I decided to make this and may put in the zucchini that I also got. I had planned to do a mix of asparagus, zucchini and carrots for my husband because he likes that blend. I can get it roasted from Central Market but it's far cheaper if I make it at home. I don't think I've ever seen the combo of potatoes and green beans before. Would be good for a family that doesn't all eat low carb. The beans were left whole so you could just add more beans and pick those out for yourself if you can't do potatoes. |

Green beans Can of diced tomatoes a splash of olive oil Chopped onion Minced (or sliced) garlic salt and pepper a pinch of dried oregano and basil A splash of sherry or marsala wine. (optional- you could use water) Cook till the beans are tender and serve. ****************** And another recipe... Cook green beans in a pot with water till they are tender and hold aside. In a fry pan with melted butter or olive oil simmer some onions till they are soft. Add salt and pepper to the pan, then sprinkle a bit of flour over the sauteed onions and add some water or broth. It will make a slightly thickened sauce. Add the drained beans to that and toss well to coat. ********** There are others too, involving bacon bits and green beans, or sauteed garlic with green beans. Very similar to my diabetic spaghetti tht i make with Italian hot (or sweet if you prefer) sausage(I get a kosher beef version) , steamed string beans adn any kidnd of good Italian tomato sauce. You could just throw in some browned sausage pieces into the mix above for a one dish meal. I might well try it myself. Wendy |

The beans were > left whole so you could just add more beans and pick those out for > yourself if you can't do potatoes. I made this tonight. The beans were odd. Felt almost slimy on the outside, but otherwise looked very fresh. I just rinsed them very well. They tasted fine. Couldn't get baby reds at the store I went to. For some reason this store generally has a small selection of potatoes and oddly they often cover them with some sort of plastic thingie. Like a big drape. So I picked out the smallest I could find of the red potatoes and cut them in many pieces. I also couldn't find fresh basil. Just as well probably. Yes, I know it has the best flavor but there is always way more than I can use before it goes bad. I just used dried basil. I also added a whole red onion plus about half of another one. Cut it in chunks. Didn't boil the onion. Just put it in when I sautéed it all. The end result was about 1/2 beans and onions and half potatoes. I added a ton of freshly ground black pepper because I like it. Very good stuff! Angela even had seconds and although green beans are her favorite vegetable, she normally won't touch them unless they are the canned kind. |

If you cook the fresh green beans enough, they will become very much the texture and flavor of canned. If I use canned green beans, I will sautee an onion till it is nice and tender and sweet, then put the drained canned beans in on top of it, and toss it with lots of salt and pepper. But now she can have a night here and there where she doesn't have them. |
