One minute mug muffin
This muffin is made in the microwave in about 1 to 1 1/2 minutes
depending on Micro power. Original recipe excluded nuts, buckwheat or spelt, vital wheat gluten, cocoa and salt. Ingredients: Quarter cup of ground whole flax seed (grind in coffee grinder) one heaping tsp of buckwheat or spelt flour one heaping tsp of vital wheat gluten 2 Tbsp chopped nuts one tsp of butter one egg or equivalent liquid egg 1 tsp of baking powder 2 packets of Splenda 1 tsp of Hershey's Unsweetened Cocoa 1/2 tsp of cinnamon sprinkle of salt Directions: Melt butter in mug in micro for 12 seconds add all other ingredients and combine well Micro on high until muffin rises and sits up there for another 15 seconds or more. Then, turn the mug upside down over a plate and shake it out. Cut the muffin into quarters and serve. If the muffin tastes a bit flaxy, micro the quarters 15 more seconds. |
