Damsel's Chocolate Brownie Cookies Recipe By :Damsel in dis Dress Serving Size : 48 Preparation Time :0:00 Categories : cookies low-carb Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups almond flour 3/4 cup SplendaŽ granular -- (I prefer 1/2 cup) 1/3 cup unsweetened cocoa 2 1/2 sticks soft butter -- (8 ounces) 2 large eggs 1 tablespoon vanilla extract 1 1/2 teaspoons xanthan gum 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup chopped walnuts Cream the almond flour, Splenda, and butter until well mixed. Stir in eggs and vanilla extract. Add xanthan gum, baking powder, salt, and nuts. Combine well. Drop by rounded teaspoons onto an ungreased cookie sheet, about an inch apart. Bake at 350F for 15 minutes. Remove to a wire rack and allow to cool thoroughly. VARIATIONS: Omit nuts and add unsweetened coconut or orange zest. Omit vanilla and use almond extract or orange extract.
