Busy Family Dinner - Monday - Veggie Sticks w/ Cottage Cheese Dip
 
Busy Family Dinner

Someone said last week that they like to cook, but just didn't have much
time. So, here is a menu of yummies for the busy person feeding a
family. With about 20 minutes in the morning to fill the slow cooker,
you can have dinner on the table 40 minutes after you get home.

Monday - Starter - VEGGIE STICKS W/ COTTAGE CHEESE DIP
Tuesday - Soup or Salad - Fast Green Salad w/ Thousand Island Dressing
Wednesday - Side - Quinoa Pilaf
Thursday - Entree - Beef Burgundy
Friday - Dessert - Cinnamon Biscuits

This is a nice make-ahead that will keep the family busy while you
finish putting dinner together. Adapted from the ADA's "Snack, Munch,
Nibble, Nosh Book."

Veggie Sticks with Cottage Cheese Dip

1 cp low fat cottage cheese
1 Tbsp reduced fat mayonaise
1/4 tsp dried dill weed
pinch dried mustard
1 green onion (green part), sliced very thin

2 carrot, cut in to sticks
3 stalks celery, cut in to sticks
1 bell pepper, cut in to sticks

Combine the cottage cheese, mayo, onion, dill and mustard in a food
processor fitted with a sharp blade. Process until almost smooth. Move
to a small bowl and add the onion; mix well. Serve with veggie sticks.

The dip can be served immediately. Covered, this will keep up to three
days in the refrigerator. Serves 8.
