Loaded nachos
I finally found a cheese I can eat that actually TASTES like cheese. It's
Vegan Rice cheese by Galaxy. I tried the cheddar version. Too bad it has 6 g of carb per slice. So I have to kind of ration it. I made nachos with it. I used some tortilla chips that I bought at the health food store that also contain white salba (chia) seeds. They have more fiber and protein than your regular chips. 12 chips had 19 g of carbs. I carefully counted out 10 of these, topped them carefully with some vegetarian refried beans, then two slices of rice cheese carefully torn in small pieces, then a ton of chopped tomatoes, sliced green onion and some whole, pitted black olives. I nuked it for about a minute. Just enough time for the cheese to melt. Then I topped it with fresh salsa and dug in. I accompanied this with a very small salad of spinach, bok choy, carrots and teensy tomatoes. Made a very taste, very filling meal. And it didn't spike me. I must get some more of this cheese tomorrow. Angela loves the stuff. And I must see if I can get them to order some Mozzarella for pizza. I think a slice or two would be doable for me with one of those flat, vegetarian pizzas from Trader Joes. If memory serves, they have 35 g of carbs per pizza. |
