Vegetable Lo Mein


Amount Measure Ingredient -- Preparation Method

2 dried shiitake mushroom
1/4 cup onion -- thinly sliced
1 cup cabbage -- finely shredded
1/4 cup carrot -- finely shredded
1/2 teaspoon minced garlic
1 stalk celery -- bias sliced
2 tablespoons peanut oil
2 teaspoons Oyster sauce -- vegetarian or regular
1 teaspoon soy sauce -- low-salt
1 tablespoon water -- mushroom soaking water
2 ounces Dreamfield's Spaghetti -- cooked and drained
1/2 teaspoon sesame oil

Cover the mushrooms with boiling water and let stand until soft; about
30 minutes.

Boil water and cook pasta according to package directions (9 minutes)
Drain and rinse

Slice, shred and grate the vegebables. Drain the mushrooms and slice
thinly. Discard the hard stems and centers.

Heat peanut oil in a large, non-stick skillet over medium-high heat. Add
celery and sti-fry until it turns dark green. Add mushrooms. Stir-fry
for 45 seconds longer. Add onions. Stir-fry for 45 seconds or until
soft. Add carrots, cabbage and garlic. Stir-fry until cabbage wilts.

Add drained pasta and stir to combine. Add oyster sauce, soy sauce and
mushroom water. Sprinkle with sesame oil and serve.
