REC: Vache Qui Rit soup
 
Vache qui rit (laughing cow) is a slightly ripened cream cheese that
comes in a wheel.

I saw this on a cooking show. It's apparently a French staple and kids'
favourite.

Vache Qui Rit Soup

1 large onion, coarsely chopped
1 pound zucchini, coarsely chopped
1 quart chicken broth
1 cube Vache Qui Rit cheese per serving

Boil the onion and zucchini in the chicken stock until very soft, about
15 minutes. Remove from heat, add the cheese and blend with a stick
blender. Add a nice sprinkle of hot paprika as garnish.

Too easy and very yummy, and 25g carbs in the entire recipe (4 servings).

You can also get La Vache Qui Rit in individual cubes about 1/2 inch
square, and in
different flavours. I usually find it around the cream cheese section.
I especially like
the one with caraway seeds.
