I gotcha.

In my experience the ridges do not make any real difference. You get
nice marks on the food, and in theory a bit more fat drains away, but
that's all. It works fine of course but is really no different from a
flat griddle in terms of what you can cook.

What you have in effect is a large fry pan. You can cook more food - 8
burgers instead of 4 for example - but you can't really do different
kinds of cooking than you could in a fry pan. As for BBQ, you'll get
lots of opinions but I think it's pretty generally agreed that you need
an open flame of some sort, whether it be gas, charcoal, or wood. You
can make lots of great stuff on your griddle but BBQ is not one of them.
