I recently bought a Bunn CDS-2 Granita machine because we need to make
slush (or gelato-like consistency) out of saline for a lab project.
However, it turns out this machine mainly makes ice pellets with
saline (because it is similar to water and doesn't have the Brix
number that a sugary mixture has). Does anyone know of a product that
would make a slush consistency out of saline or water?

Can you take the resulting pellets and run them through a blender?

You probably won't want to pay the price if this is a one shot project, but
most ice cream makers that have a self-contained refrigeration unit would
be able to produce a saline slush. Il Gelataio by Simac is one such
product, and their product line is one of the less expensive of this type.
