Advice on meat processing machine
 
Hi there
I would like to produce minced meat and also make sausages from my home grown meat and from game. I am getting in a muddle as to what equipment I need. Meat mincers are quite expensive and so I do not want to make a mistake.

I am thinking of buying an electric meat mincer and wonder if I also need a sausage stuffer, or if the mincer will do both jobs. I would prefer not to spend much more than £300 and would like to be able to mince up a whole deer or lamb without the machine collapsing!

If anyone could advise me on the sort of equipment I need or even recommend a make or model I would be most grateful.

I don't know what's available where you are, but for small-scale use, my
KitchenAid stand mixer with the meat grinder attachment works very well
- it also has a sausage stuffer. And, the mixer itself is handy for
combining the ground meat(s) and spices. And, you can get the pasta
roller attachment and make the pasta for ravioli as well.

You might google around, or look at www.cabelas.com they have a selection
of meat processing equipment. search on grinder

What country are you in? In the US, for a few hundred dollars one can
buy a grinder with sausage stuffer attachment that will indeed grind up
the meat from a whole deer. In fact, multiple deer. Or you can do it
with a hand cranked grinder for about 30 dollars if your arm is strong
enough.

For example the 1 hp grinder is said to grind 10 lb (4.5 kg) per minute
and is priced at 379 us dollars.

As I recall, a deer has less than 100 lb of meat for a good sized buck
(200 lb field dressed) so you could grind the whole batch in less than
1/2 hour. Take longer than that to skin and bone the deer.

I have made sausage. I do not stuff casings. Tubular sausages are a rather
inefficient shape to take up the heat from the pan. Instead I bought a
patty press and patty papers. They cook quickly. I've found it best to also
put each patty, with a paper on each side, inside a sandwich bag. (Not the
zip lock ones, but the ones with just a flap.) Then they don't stick
together.

'Mincer' is the UK term for what you call a 'grinder'. Like wise -
'minced' beef for 'ground' beef.

Many thanks for your kind replies. Please excuse my terminology, I didn't realise this was a mainly US website. I love the cabelas website. Will try and find a similar machine in the UK.

(I've had good luck with the spice blends.)

He'll ship worldwide, and has everything for creating sausage
immaginable.
(KA's are good, but might be a bit slow if you're processing an entire
animal.) There's electrics with stuffers beginning at $129.00 US.

Lots of local hunters (in Finland, that is) use Braun G 1300
meat grinder. It costs something like 200 euro locally and less if ordered
online from Germany (for example http://www.technikdirekt.de sells it). It
is not an industrial machine but ok for heavy home use. It may be
availlable in England too. See www.braun.com.

It depends how much sausage you make if you need a stuffer. A few kilos is
pretty easy to make with a grinder (I think that that braun don't have a
stuffing horn included but you probably can get one locally).

Importing from USA isn't very practical option, shipping may be very
expensive and voltage is different (110 V vs. 220 V).
