One with a large enough volume of oil/shortening that it will fairly
maintain temperature when you dump a load of frozen product into it. ":^/

In Australia it would be none - most restaurants don't serve fried foods.
We like to cook our food so that it tastes nice and doesn't clog our
arteries.
