Guiness Truffles
Hi All,
Here's one of the St Patrick's day treats I made that may be on the menu year round since it has become very popular. -----> Guiness Truffle Ganache Taste has bitter & sweet from the beer, a beer taste and a nice chocolate wash if you put it in chocolate pieces or truffles. 12oz bottle of Guiness 1.5 cups sugar (Chef's Fine preferred) 12oz Dark Chocolate - pistoles or ground up 12 oz Milk Chocolate - pistoles or ground up 3/4 cup of cream Boil the beer & sugar together over low heat until it becomes like a syrup - about 7 minutes. Cool mixture in the refrigerator for 10 minutes. Slightly boil the cream & add to the chocolate Mix & melt chocolate as well as possible. Add about 1/4 cup of beer and continue to mix Add the rest of the beer, mix until smooth. The trick is in the heat - not too much or separation will occur. Better to have the beer too cold than too hot. Melt all the chips, use a bain marie if necessary, but you shouldn't have to add any heat if you use the beer at a warm temperature. If adding to molded chocolates make sure the ganache mix is cool enough so the molded chocolate doesn't lose temper.
