I was wondering if anyone had any recipes for bittersweet chocolate
cakes or pastries? I can't seem to find much except for fudge which I
don't want to make.

Try your local library for chocolate cookbooks. If they use the "Dewey
Decimal" system, go to 641.6374 They may have some,e fab recipes there.

Check out Alice Medrich's new book, "Bittersweet". It's all about baking
with higher percentage chocolates.
