Except for Minifie, all of the best books are long out of print,
and quite expensive when they can be found in used book searches.

Stephen Beckett's Book on Industrial Chocolate Manufacture is a lot
better than Minifie (which by the way is not purely focused on
chocolate but on confectionery as a whole).
http://www.chipsbooks.com/induchoc.htm and its currently available in
4th edition.
Beckett is purely on chocolate

Thanks, again. I just ordered the book
through a used book search service (biblio.com).
Normally, this is a really expensive book,
but a bookstore had an ex-library copy,
unknown edition, that will cost me about
$10 including shipping. I just got a
confirming e-mail from the bookstore.

Although not as nice as a new current
edition, it's so much cheaper.
