Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

Default butt vs picnic

I had great success with a butt some time ago, but when I did a picnic
this last weekend, it came out much drier and really didn't pull as
well.

Is this difference to be expected, or perhaps attributable to the
particular cuts I used?

Thanks,

- bc

I've had great results with picnics. That's usually the cut I cook
because they're cheaper. Maybe they cooked to long. I usually pull
mine off when they hit 180, the let them sit under a tent of foil
before I pull them. I did some a couple of weekends ago. Tried
something different. I remove most of the skin for better rub
coverage and more bark. They turned out great. Used a WSM.

The last picture has sauce mixed in. Working on a competition
recipe for a local contest next year. It'll be our first.

I find they cost about the same as a butt when you weigh out the finished
cooked meat. Picnics have more waste.

I've had very good results with picnics bc. Can't imagine from your
brief description what happened.
