Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

for I have sinned. I have said Baby Back ribs are better then Spares.
At the right sale price, I don't think I am wrong.

What is the penance for a barbecue cook to go against the thoughts of
many barbecue cooks? I will accept my penance.

For more information on my sin, see ABF.

That series made me go out to the back 'frige and get more leftovers to
munch. <g>

And for what it's worth, I agree with you! They are much much meatier,
especially if you don't trim them. I never did see the point in
trimming ribs other than for aesthetics? Waste of meat imho! It all
BBQ's up just as yummy. ;-d

I got the two racks I did for $1.57...

The neighbor kid just stopped by to cut my grass. I gave him 3 ribs.
His eyes lit up eating the one I saw him eat. He wanted to go to a
barbecue joint.. Now, if he has the sides, he doesn't need to... He's
gonna make a few bucks cutting my grass and save another $15-$20 not
going to a barbecue joint !!! Less then an hour, makes the $25 I give
him and saves another $15. Not bad for a Sunday evening !!!

I like spares, at $1.49 or less... Don't mind trimming now that I have
a good knife and know how...

What kind of ribs did you cook?

Gives you a warm fuzzie to see others enjoying your cooking doesn't it?
:-) I enjoy cooking for others more than I do for myself. It's one
reason I've tried to become proficient with a microwave. It's all I
have available at work if I want to cook something from fresh. There are
limits, granted, but plenty of stuff works in a nuker if you have the
tools and techniques.

I'm looking forward to tomorrow. One of the housekeeping people that
cleans the lab every day knows that I was BBQ'ing this weekend and
hinted, and Thursday when I was putting away supplies, I lost an almost
brand new tube of Burt's Bees lip balm in the boxes when it fell out of
my pocket. I went back thru the boxes and was unable to find it. <sigh>

Those things are 4 bucks each!

I told him about it and when he took the boxes out to the trash, he
hunted thru them and found it for me. :-) He will be the recipient
tomorrow of some of this weekends cook!

And I'm betting your cook was better than anything he could have bought.

Spares. If I can get any of these pics to turn out, I'll be posting them
on picasa and a.b.f. I've downloaded them from the camera and just have
to pick out what ones and photoshop to shrink and adjust them.

I see no point in trimming them and don't bother. The meat is all good
in the parts that are normally trimmed off! I really don't see why
other than aesthetics and they all look and taste good to me!

The place he mentioned, I have heard is pretty good. Never been there
my self..

I was hoping he came by during the cook to smell the aroma. Being the
cook, I don't get to smell the aroma well :-(

I think you may be pleasantly surprised. You can cut thru the chine
bones at the top when you cut the ribs apart, and leave them on as part
of the eat.

Thanks. I was expecting some good natured harassing on proclaiming Baby
Backs better then Spares. Over the years, I have seen some pretty
strong opinions that spares are better then baby backs...

Ah, your one free Gig, the other 309 is paid for then.

ISP provided storage must be treated as temporary storage is one big
reason there Greg.

Who is your internet provider. if you use dial up, large photos would be a problem

With 1GB, I can easiy upload 500 large photos.
While I have bought space, I started out with 500 MB.
They have since included unlimited storage. Thats for new users.

Hey that's nice!

But, my provider allows only 5 megs of "free space", then it's $5.00 per
month extra per meg.

Not per gig.

Gmail is free and so is the space. :-)

I may have to put up with the occasional ad attached to any one pic link
(and they have tagged the ones that get the most views on occasion), but
it's not overly intrusive.

Wow. Thats antique. Most of the providers have kept increasing space over the years.
Even when I started on the net 15 years ago, I got 10Mb.

T-Bone is a 'better' cut than brisket, and baby backs are a 'better' cut
than spares. Saying 'better' doesn't mean they are better.

Spare ribs and brisket are traditional bbq as they were at one time
considered throw away scraps. My late wife who'd be 64 now told me of
her youth living in Chicago's South Side during the 1950's.

They carried buckets to the slaughter yards (smell as of hell in the
summer) to carry back home the thrown aways parts, intestines,
spareribs, feet, tails, neck, stomach, etc...

BBQ and most of the great foods are from the streets and kitchens of the
poorest of the poor. Necessity being mother of invention.

Can you bbq a New York Strip?, yes I suppose one could, but to me it
just isn't the same. When I sit down to partake of a spare rib I give a
nod to those who suffered so but persevered anyway.

Nice post. :-)

What is really annoying nowadays is that some "throw away" parts have
now become high priced "gourmet" items. <sigh>

Wings come to mind for a start, as does Lengua.

Don't even get me started on the insane price of a chicken! LOL! The
best bargain remaining is chicken leg quarters. If they shoot up there
will be nothing left for working families.

Yes. I've seen them for that. :-)

Whole fryers at Fiesta were $.67, limit 3 with an additional $10.00
purchase. Be sure to take a look at the crumpled Fiesta flyer I sent in
your box. It was this past week's sales that ended today.

I bought 6 nice beef shoulder steaks (2 family packs) for $1.57 per lb.
and a large bag of catfish fillets for $1.99. I intend to try smoking
catfish for the first time, probably next weekend! I have to work this
weekend.

I had limited freezer space so did not purchase any chickens. I escaped
from the store yesterday for a mere $32.00 for all of that, plus soup
makings for work for the week that included 20 limes at 10 for $1.00,
some bean sprouts, watercress, cilantro, Roma tomatoes at $.88 per lb.,
3 lb bag of carrots for $1.99 and 6 Avocados at 3 for $1.00.

:-) :-) :-)

I love Fiesta and since I drive to Austin once per week to see my
Chiro', there is no reason to not shop there more frequently!

I actually like legs/drumsticks better than thighs. Thighs tend to be a
bit too fatty for my personal tastes, but they are great boned and
skinless for various things, and also make fabulous chicken sausage.

Jealous.
Whole chickens this week are $4.99. One dollar off. 56 OZ makes it about
$1.50/lb...

Nice, I think Big Jim likes to batter up catfish and deep fry them.
Sound delicious, but never done them myself..

Not limited freezer space. Freezer is full.........

I have bought thighs, skinned and deboned for stir fry type use..

Thighs are a darker meat I think. That is what is appealing to me.
(when the price is right :-) )

Oh gack! I don't think I've paid more than $1.29 per lb. for whole
fryers in recent memory. :-( They are often $.88.

Indeed! I don't batter fish, but I will rinse them with water, then
dredge them lightly in spiced corn starch or rice flour, then deep fry
in peanut oil.

Not with any great frequency, much to dad's sorrow!

The light coating soaks up a minimum amount of oil.

So is mine, now! <sigh> It needs to be gone thru and I need to start
ignoring meat sales!

I keep swearing I'm going to catalogue the freezer contents on a dry
erase board. I have the board and have not done it yet.

They are, but I prefer to remove that fat pad between the muscles in the
middle.
