Congratulations Dave, And Good Luck!!!
The subject of opening my own bbq business keeps coming up in conversation. Most friends, relatives and others who have enjoyed my 'Q over the past several years have been pushing me to start the ball rolling. I am unsure if my 'Q is worthy of a stand alone business, and I am not interested in a franchise. I also lack the confidence, that whole thing about quantity and quality and capitol is also an issue .. Please be so kind as to give a brief summary of how you went from concept to reality with your new endeavor. I say brief, since I'm sure your time is in short supply, although, lengthy would also be welcome. We/I will be entering our second and third competitions this year. The first was in Wildwood, NJ last July, we finished tenth overall out of 29 teams, no categories. I do the same for the request for your summary of experience as well since I, too, am often prompted by friends and family to do the same. However, I have no urge to actually run a restaurant. Rather, I'd love to set up a roadside stand using a concession trailer. I've been looking into it, but the capital thing just keeps getting in the way. -joe |

The Wenatchee Business Journal just did an interview with me (man, after the two hours I was exhausted). The purpose was to provide readers with a look at how someone decided to start a small BBQ restaurant business. It is supposed to include -- among other things -- how I went about deciding to take the plunge; how I decided that the local market would support a 'Q joint; what was involved in getting capital; and how I decided on the model I wanted to use for my business. Supposedly, the reporter also interviewed -- with my permission confidentiality concerns -- my banker and the Small Business Development Center representative whom I worked with, in order to get their take on why they felt I would be successful. When the Journal comes out I will scan the story into Word and copy it into a post on AFB. It's a good rule when trying to decide how to get an objective opinion of your efforts and desires. But the nice thing about competitions, you get to measure your efforts against other 'Q enthusiasts. Dave |

Southern Yankee BBQ makes an interesting rig that can be used as a roadside stand. I didn't want to open a full-blown restaurant either, which is why my model is a 10 table dine-in / take-out joint. Order, pay, and pick-up at the counter. Customers can sit at a table, eat outside at one of the picnic tables, go across the street to the park, sit in their cars, or take it with. No front-of-the-store staff at all. Just at the counter. Dave |

Of course, you'd need to find commercial kitchen space or a commisary in order to obtain health permits, but it's do-able. Dave |
