I just got an official document that says my 'Q joint's name and trademark
are now registered. As if that makes a difference. I just gotta smile.

Congratulations Dave, And Good Luck!!!

The subject of opening my own bbq business keeps coming up in conversation.
Most friends, relatives and others who have enjoyed my 'Q over the past
several years have been pushing me to start the ball rolling. I am unsure if
my 'Q is worthy of a stand alone business, and I am not interested in a
franchise. I also lack the confidence, that whole thing about quantity and
quality and capitol is also an issue
..
Please be so kind as to give a brief summary of how you went from concept to
reality with your new endeavor. I say brief, since I'm sure your time is in
short supply, although, lengthy would also be welcome.

We/I will be entering our second and third competitions this year. The first
was in Wildwood, NJ last July, we finished tenth overall out of 29 teams, no
categories. Curious to see if it were beginners luck

Thanks,

Danny

I second (third, fourth, whatever) the congrats and wishes of good
luck.

I do the same for the request for your summary of experience as well
since I, too, am often prompted by friends and family to do the same.
However, I have no urge to actually run a restaurant.

Rather, I'd love to set up a roadside stand using a concession
trailer. I've been looking into it, but the capital thing just keeps
getting in the way.

Based on his crews comments about commercial q's quality, that is an insult.

Not intended as one; quite the opposite. I intended
to suggest that Dave will be successful in changing the
national perception of what commercial Q is.

Thanks, Dana. But promise me something: if I EVER start talking franchise,
just shoot me, please.

The Wenatchee Business Journal just did an interview with me (man, after the
two hours I was exhausted). The purpose was to provide readers with a look
at how someone decided to start a small BBQ restaurant business. It is
supposed to include -- among other things -- how I went about deciding to
take the plunge; how I decided that the local market would support a 'Q
joint; what was involved in getting capital; and how I decided on the model
I wanted to use for my business. Supposedly, the reporter also
interviewed -- with my permission confidentiality concerns -- my banker
and the Small Business Development Center representative whom I worked with,
in order to get their take on why they felt I would be successful. When the
Journal comes out I will scan the story into Word and copy it into a post on
AFB. The stories that the Journal does are usually pretty detailed, so if
it runs to long for a single post, I'll break it up into multiple posts.

Rule #1: Family and friends will usually tell you what you want to hear, so
don't rely on them. It's a good rule when trying to decide how to get an
objective opinion of your efforts and desires. But the nice thing about
competitions, you get to measure your efforts against other 'Q enthusiasts.

Talk to me after you've busted your ass in the restaurant biz for a year. If
you can design a business model for making good Q profitably in one
location, you can teach others to do it.

See my reply to Danny.

Southern Yankee BBQ makes an interesting rig that can be used as a roadside
stand. I didn't want to open a full-blown restaurant either, which is why my
model is a 10 table dine-in / take-out joint. Order, pay, and pick-up at
the counter. Customers can sit at a table, eat outside at one of the picnic
tables, go across the street to the park, sit in their cars, or take it
with. No front-of-the-store staff at all. Just at the counter.

I almost mentioned that in my note but left it out
for the sake of brevity, since I figured we were all
on the same page anyway. Franchise... brrr... shiver...
slap me!

Now, if I ever see a bottle of "Dave's Pit Sauce"...

Exactly what I've been looking at for the past year or so. Not all
that sure of the cooker, but I can get others instead.

Should be by the 10th of June.

Yup. Set it up with the pit you want. You could also put together a large
covered patio area for seating. Of course, you'd need to find commercial
kitchen space or a commisary in order to obtain health permits, but it's
do-able.

Certainly! I'd been looking at some BWSs, Old Hickory, So.
Pride...Klose! Needs a grill, too, for some steaks! )

Anyway, I get a lot of catalogs from Central and Hubert and such, and
I've been looking at the table setups and such.

My wife has an old high school friend that started a catering jaunt
close by, so I'd user their kitchen...
