Gonna look through the recipe ideas I've gathered here and elsewhere and decide what sounds best at the time. Gotta check El Cubano and the Argentine Meat Market first: I think it's called 'quéjese pecho'(?) or sumpin like that. Otherwise, Costco. I hit Sam's this morning intending to buy a packer, only to find flats only. I asked the meat guy and he said they "can't get packer cuts any more." Sam's can't get packer cuts? Hard to believe. I bought a flat to corn and smoke for the company stream that's infested us for awhile, but I sure was disappointed in no point on the brisket. At least it isn't soaked in that brine that Walmart uses on damn near everything. Glad you all had a good time at the Silver River and wish I had been there for the good eats and company.
