Turkey: Weber 22" vs. WSM
In the past ten days I've done two turkeys on both the Weber 22"l, and the
WSM. Comparison: Weber 22: relataive low # of coals positioned as wide from the center as possible on both sides; drip pan with two cups H20, 12lb turkey, Turkey not turned, but positioned breast side down on rack throughout; cooked at 300F for 3 hours. WSM: semifull Minion technique charcoal; no water added; drip pan positioned on top of dry water pan; cooked on top rack, rotating bird every 30 min; temp 325F for 2.5 hours. Both turkeys brined 2 days in brine with 2/3 cup/gal table salt & 2/3 /gal with assertive heated seasonings[allspice, clove, peppercorns]. Result: The Weber 22 turkey was superior in all respects; brown crunchy skin; moist flavorful breast and remainder. WSM turkey had all the negative stuff; dry tasteless; skin was moist and floppy; less smoked taste; bottom done more than the top, or breast side The turkey in the Weber won hands down. As well easier to monitor; easier to get to the drippings for the gravy. We've had four warmup dishes since, unheard for us. The turkeys were low buck Honeysuckle brand from the Safeway; $7.77 for 12lb. It was enhanced; I brine enhanced turkeys with excellent results. I read that he massaged the bird in the WSM and left the bird in the kettle to fend for itself. Then he delclared that the WSM bird was good while the kettle bird was virtually inedible.
