After poping in to read the posts here from time to time, I finally got
around to buying an ECB. I also printed out the appropriate modification
instructions so that I can make the mods prior to first use.

I figure that if I get started (and learning) on real BBQ with a cheap &
drafty moded ECB, that when I'm in a position to upgrade, I'll not only
know exactly what I want, but will be able to truly appreciate it :-)

My sentiments, exactly! That's why I bought the small Brinkmann Gourmet.
I don't intend to become a world-class smoker like some of the folks
here. It's just a toy for me to dabble with.

You'll never need anything more than an ECB. WSM's are over-rated. "WSM"
stands for "Women's SMoker". Real Men use ECB's.

I'd try it without any modifications first. Especially if you have the
"Gourmet" model, which doesn't need any, IMNSHO.

hey, whatever works for anyone is what they should have. Anyone tries to
take my WSM is in for a fight though.... No muss, no fuss, just easy to
use and don't require alot of tending to maintain temp.

On cooking : Gonna do a TFM based brine on a 16lb Turkey tomorrow and
cook that sucker Sunday. I got a lotta seasoned oak which burns hotter
than I like for BBQ so will be perfect for roasting a big bird.

We have fun and know each other is kidding. Don't like it let me know
and I'll tell you how to insert calvins@optonline into a killfile. It's
the only id I use so you don't have to worry about morphs.

I really don't know what your problem is given your past discussions but
I guess I rub you the wrong way for some reason. Sorry, but I'm not
going to lose any sleep over it

Don't knock it just because you can't afford it. I couldn't either. If I
hadn't received mine as a wedding gift I'd still be cooking on a concrete
block pit like a (ahem) real man.

Real men tend to appreciate the finer things in life. The ECB is a Ford
Pinto and the WSM is a BMW 5 series. They'll both get you there but only
one has boogers under the seat.

At some level I think the Weber Smokey Mountain is a hunk of overrated junk.

1. Charcoal: It uses too much charcoal to maintain a 250 continuous
heat. Quite a lot of charcoal heats a large water pan to the simmer stage,
or slightly over 212F. This, plus heat around the edge gives you 225F-250F
continuously even with fairly widely different ambient air temperatures. It
takes a lot, far more charcoal than it should, to cook at 250F. The WSM
heats a high volume water pan. That takes more charcoal because it takes
more BTU to heat a large water to the simmer temp. I'm sure there is a
striking difference between the charcoal consumption of a ceramic smoker and
a water smoker.. .
2. Water Pan: On the new 18" WSM when you open the door you can't see or
tend charcoal on the opposite side of the charcoal bed. To solve this you
have to order a Brinkmann water pan, that is has a flat bottom, and allows
you to get to the other side of it. This is a serious problem that Weber's
customer service can't seem to understand. Chris Allingham at the Virtual
Weber Bullet http://www.virtualweberbullet.com/ does and suggests the
Brinkmann pan. You shouldn't have to do this in a $300 smoker.
3. It runs out of charcoal. To smoke 10+ hours even with the Minion
method, the charcoal burns itself out at 5-6 hours, and needs replenishing.
To do this you have to lift the whole smoker off its charcoal base, add
charcoal and put the smoker back on. The body has NO side handles.It's also
a royal pain. At that point you think of gas momentarily.

On the plus side: The WSM is built of heavy gauge steel. The grates are good
quality, and don't tend to self destruct after years of usage. When they do
replacement grates are readily available, usually at Home Depot. Weber
almost always has good customer service and decently priced replacement
parts. You will need replacement parts on any charcoal product after so many
years. You should, therefore, buy a product that will be in business when
this need arises. I wouldn't buy, for example, any grill with an unknown
brand name from China. It may not be in existence a year from now.

Would I buy it again? I don't know. For smoking I'd again consider gas,
thought I realize that's sacrilegious. Also charcoal does add a bit of taste
in addition to the wood, I think.
