Default Whole Briskets

I live in northern NJ and can't find whole briskets. Points or flats
alone don't have enough fat to sustain a lengthy session in the
smoker. Any suggestions of where to find them?

If you were fortunate enough to live in the South, you could get them for a
reasonable price at a Super Wal-Mart.
If you were fortunate enough to live in Texas, you could get them for next
to nothing at any grocery store during any good ol' American Holiday!
(Yeehaw!)

Since that isn't the case, I wish you the best of luck. It might not be
possible to find one up there for less than 6 bucks a pound.

The days of $.50 brisket have been over for 2-3 years now. Once
they were on sale for $.99 at Randall's (a Safeway company) a year
ago, but that was always a hoax - they never had any of the meats
they advertised on sale. And if they did have any, they went rancid
within a day or two.

Walmart is a good suggestion. Its the only beef they sell that
isn't injected full of ****water.

Living in Houston, TX we still find whole brisket at 99. cents/pound. Being
half Jewish and my father being from New York, I suggest you find a nice
Jewish meat market.

It will be Kosher which you will pay dearly for and may be trimmed of fat
unless you specify to leave it untrimmed.

Most Kosher meat markets and some deli's sell brisket for corned beef and
other applications besides Bar-B-Que.

I have watched a show called Cowboy Cooking where they have mail order beef,
although I would never try any mail order meat products myself.

It's not just limited to Super Wal-Marts in the south, the Super Wal-Marts
up here also stock cryovaced whole briskets, Excel brand I believe. I've
never been able to find a grade indication, but assume they are Select
grade.

If you don't have a Costco or Super-Walmart close by, check with your local
butcher shop as they too can get/order whole brisket.

When my son and his wife moved to Austin, they had to get Texas driver
licenses. When the licenses were handed to them, the fellow said,
"Congratulations." My son asked, "What are you congratulating us
about?" The DMV guy said, "Becoming Texans."

It probably IS something to congratulate people about, but it took my
son almost a year or so before he accepted that beef can also be called
barbecue. <grin>

I dunno. Them folks down to Austin can be super weird at times. But
they do have some blues joints where a fella can tap his toe to the
tunes while guzzlin' down cold brew. It can make for a righteous
evening once you start on your 2nd sixpack.

It was quite a shock to this New Jersey girl when I learned that
brisket was something other than a pot roast.

Moving to Texas was certainly a learning experience, but I'm still here
and I will never, ever regret becoming a Texan. I've traveled all over
North America, having lived in an RV between 1996 and 2005, and, having
seen it all, there is no place I'd rather live than Texas.

I am still a NY Giants fan, but don't tell the Cowboys fans in the
neighborhood, please <g>

If Texas had New Jersey tomatoes and decent rye bread it would be perfect.

Nope. I keep the lump piled up to keep the fire area small. Two
packer cut briskets'll fit on the other end just fine.

I guess I should explain this a bit more. I had a welder friend of
mine make me a ring of expanded metal grating that's 10" in diameter
and 9" tall that sits on the fire grating. It holds plenty of lump
while keeping the fire contained to a small area so I can get those 2
briskets cooking in offset mode.

Thank you for the additional explanation, I was pretty sure you
weren't fiddling with all the fire tending needed with a small pile.
Side door access instead of lid used too to replenish it?

I have been buying these whole briskets for $1.72 per lb at the Mount
Vernon, OH Wal-Mart for the last couple of months. They will run around 15
lbs and cost around $25 ea. Yummy when slow cooked over RO lump on the WSM
with some mesquite chunks tossed in. I use CYM and some Canadian Steak
Seasoning and whatever else I can add to the mix and no complaints from the
my wimpy peanut gallery or the neighbors that share some with. What does
not get consumed gets vacuumed sealed and froze for this winter eats.

I noticed that not all Wal-Marts in this area carry these cuts of meat. We
have several Super Wal-Marts in this region with two in the greater
Mansfield, OH area plus a Sam's Club (only one located between Cleveland and
Columbus,OH). When I inquired at the Possum Run Road, Wal-Mart store
(located on the SE side of town), I was not told they don't carry them as
they had no demand for them; I don't know if the west-side location over on
Lexington-Springmill Ave. carries them or not (this has been reported to be
one of their busiest stores in the state). They also have the best price
on fresh Pork Shoulders and Picnics; both were cheaper than the local Sam's
Club; where their best price requires buying a whole case.

Back to lurking...everything I know about barbeque I learned here from
reading this newsgroup; thanks folks.
