Walking thru Schuck's/Pork Butts
Yesterday I was walking thru Schnuck's looking for breakfast sausage and
stopped the butcher who was pushing a cart of pork butts. I asked him what was up with the butts and where the sausage was hiding from me. He said that the sausage was behind me. Dooh! And he was taking the butts in the back to slice up into pork steaks. I asked him how much give me off to buy the 9 butts off him whole. He rubbed his chin and said quarter a pound since the were on sale for $1.19 already. So I said okay. I picked up my mini marshmallows and tosses them into his cart and grabbed a chub of sausage and headed for the front with him. Now eleven hour later they have been in the smoker for seven hours. They just hit 140 F and I slipped them into foil jackets and banked the fire at 250 F. After four years with this smoker I know that I can sleep for four hours and it will be just fine. I hope to get a better yeild than last time with these butts because this is not enhanced pork butts. Last time they tasted great but cooked down alot. We will see. It is the first time I am going to put the anyone wants food sign out since we moved in to the new house.
