Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

Does anyone have a low sodium, low carb (or no sugar) BBQ sauce recipe
they are willing to share?

My wife is diabetic and has also been put on a low sodium diet.

Thanks,
Donny

This is a link I found using google. I'm on a low sodium diet but have not
tried it yet.

HI, Don,

I have diabetes, too. I've found Splenda to be an excellent sugar
substitute. It's sugary sweet and doesn't up my blood glucose.

I don't know if this will help, but we eat our pulled pork with a
Carolina-type sauce. It's sure different from the KC style, but you
might give it a try:

Texas Pete, Crystal or Franks Red Hot, mixed with an equal amount of
apple cider vinegar. Make up about 1/2 cup at a time. Mix in a tsp of
salt and if you want more heat, add in 1/2 to 1 tsp of crushed pepper
flakes.

We mix ours up and keep it in a bottle with pouring spout. For color
and flavor, I purchase dried red chili peppers at a Mexican grocery
store and stuff them into the bottle before filling. They add flavor
and color.

Nick is right on Splenda is an excellent sub for the sugar. Make this
recipe and if you like it as-is cool otherwise add some splenda.
Also because it has no sugar added, it won't burn on the grill like
most sweet BBQ sauces.
BTW the quantities are a bit large I know, but I made a quick
reduction of my recipe that I bottle for sale. Cut it down to make an
amount you can deal with.

I call it:
Olhippie Gourmet BBQ Sauce
Un-Plugged

6C T. Paste
9C Water
2.5C Cider Vinegar
1C Black Coffee
..5C Worcestershire
..25 C Soy Sauce
..25 C Hot Chili Sauce (you use the one you like, there a a gazillion
of em)
..25 C Chili Powder
..25 C Garlic Powder
..25 C Mustard Powder
2tbl Black Pepper
2tbl Onion Powder
2tbl Rubbed Sage
2tbl Ground Cumin
