Turkey Question
I've lurked here for many years and gleaned some good information. I've
never really participated because any smoking I've done was on a Kenmore gas grill with cast iron chip boxes. It worked pretty good - I stuck with boston butt and brisket. Then last year I traded the Kenmore grill for a fancy JennAire grill. The darn thing won't get the woodchips hot enough to create smoke! It does a great job when I want to grill so I'm not complaining about it. I preach to people - buy the proper tool for the job and a JennAire grill is not the proper tool for the job of smoking meat. So this past Christmas my husband bought me a BBQ Grillware verticle smoker. We decided it was the proper tool to train with. I wanted a gas smoker because I don't want to play with fire at this time.My first smoke was a brisket and boston butt - two meats I'm fairly familiar with. I used apple and mesquite chips and cooked the meat for 10 hours at 250. I should have even cooked a little longer or a little hotter. The next weekend I cooked St. Louis Ribs and a brisket again I used mesquite and apple chips but I cooked at 300 for 12 hours. Well, I killed the ribs. I should have taken them out way earlier but the briskett was fantastic! Now my question. I bought a frozen turkey last weekend and was planning on smoking it on Monday since I had the day off. I left it in the refrigerator to thaw and it didnt until sometime late Tuesday. By then it was rainey and cold so I didn't go out and smoke the turkey. I'd like to smoke it tomorrow. I just wonder if it is still good. If it thawed by Tuesday (slow thaw in refrigerator only) and has been in the refrigerator since will it still be good to smoke on Sunday (5 days after it had thawed). My butcher at Publix says it will still be good but I'd like to get the opinion of people I know and respect as well. Thank you for your help GaDragonfly |

If yer 'fridge is below 46°F where the turkey is, you should be fine. Of course, I'm so old that I can't tell if I got sick or if I'm as usual. -- Nick. Turkey Question
Thanks for the advice, Norm, TFM and Edwin. Using my remote thermometer I
checked the temp in the refrigerator where the turkey was sitting and it was 34 degrees. Mr. turkey is now in the smoker with apple and pecan and apple juice in the water bowl. Its chilly outside but I managed to get the smoker to just over 300 so I'm optimistic. Julie Norm, I wouldn't be so rude as to comment you your state of decrepidness..at least not after you've been so nice to reply to me. I'll let others do that. |
