3-d Christmas Trees

Amount Measure Ingredient -- Preparation Method
-------- ------------- --------------------------------
1 cup butter --at room
temperature --cut into 1/2" pieces
4 cups Ultimate Cookie Mix --1 recipe
1 egg
1/2 teaspoons vanilla extract
1/2 teaspoon green food coloring
Vanilla frosting
Red decorating sugar crystals
Yellow gumdrops

Preheat oven to 350ºF. Butter baking sheets.At low speed, beat butter into
cookie mix until mixture is sandy.Beat in egg and vanilla, then food
coloring. Divide dough in half.On lightly floured surface with floured
rolling pin, roll each half to 1/4"thickness.Using 3 1/2"-long Christmas
tree cookie cutter, cut out 28 trees, rerollingscraps. Trim off
trunks.Starting from bottom center in half of cookies, cut 1 3/4"L x 3/8"W
opening.In remaining cookies, starting from center of top, cut 1 1/2"L x
3/4"Wopening.Place trees 2" apart on baking sheets.Bake 10 minutes. Cool 5
minutes. While cookies are warm, trim openings tooriginal size. Remove
frompan. Cool on racks.To form trees, slide bottom cutout cookies into top
cutout cookies, trimmingas necessary to fit.Transfer frosting to plastic
food storage bag. Snip corner. Pipe onfrosting. Decorate as desired.
