Consider using corn/golden syrup as a replacement for white sugar and
molasses/tracle as a replacement for brown sugar. Make sure it's
replacement by weight.

Also I've heard that adding a little bit of milk to the eggs before mixing
helps.

Take em out of the oven just as the edges start to get brown. It's okay for
it to look undercooked at first because it cooks a bit more after you pull
em out, and the cookie solidifies more as they cool.
