fish sauce (again)
 
Ok, I just ran out of my bottle of 3 Crabs fish sauce, and I am ready
to place a new order. I was happy with 3 Crabs brand (much better
than Tiparos).

What should I order? Squid brand, Golden Boy or stick with 3 Crabs?

The only one I know is Golden Boy and that has always been very

I've used Golden Boy, and it was good. There's also Cock Brand Fish
Sauce..

We're presently using Pa-Siam, but Jun mentioned several other brands.

i've read good things about 3 crabs. squid brand is widely available
here, and that's what i have.

As I posted b4, the salt content in the fish sauces you mention are highly
loaded with salt....less than 1 T furnishes all the sodium you need for one
or more days. Tiparo make a fish sauce that has more than enough salt but
still 1/2 the amout of the rest so look for this special preparation...We
have to consider are we equating good tast with sodium overload or not?????
perhaps we should deverlop our taste to the extent that we can define
exactly what we are really experiencing when we judge one product over the

Used properly, one would never ever use 1T of fish sauce for one
serving of food. If I'm using fish sauce as a condiment, I don't put
any more than a few drops on my food.

Perhaps we have to develop our minds enough to judge just how much
fish sauce we're actually using (per serving), then determine if we
even have sodium overload.

Hey, Rona! Good to hear from ya. I totally agree. In most of my (Jun's)
recipes, I add the fish sauce caveat, "Too little is better than too
much!"

Yes! Definitely err on the too little side! You can always add more
at the table, after all.

Years ago on the Food Network, the two chefs on the Two Hot Tamales
(can't remember their names--something like Milliken and Fenniger??)
were making something Thai, and they used either a whole cup or half a
(large) bottle of fish sauce in the dish!!! Either way, it was
waaaaaaaaay too much! My mother sent them an e-mail telling them how
foolish they were, but they never replied. I wonder why....

I used to use 3 Crabs but found out it isn't naturally fermented. It
is flavor-enhanced. So I went to Golden Boy which is excellent.
