Black Eyed Peas with Smoked Turkey and Tomatoes
There is no reason to give up traditional dishes; typically this would
have been prepared with either ham hocks or bacon. Neither of those are
conducive to keeping your cholesterol level in check and protecting your
heart. A few tweaks here and there and youave got a healthy and delicious
substitute. Dishes like this help you to lead a healthy eating lifestyle.

Black-Eye Peas with Smoked Turkey and Tomatoes
1 (16 oz) pkg black eye peas washed and soaked overnight
1 ( 14 oz) can diced tomatoes
1 medium onion sliced
1 lb smoked turkey legs
1 (49 oz) can low sodium chicken broth
2 bay leaves
salt and pepper to taste
Remove meat from turkey bones. Rinse and drained black eye peas and place
in a 4 quart Dutch oven or crock pot. Add turkey, tomatoes, onion, broth,
water, bay leaves and seasonings. If cooking in a Dutch oven bring to a
boil, then reduce heat to low and simmer for 1 A1/2 hours or until beans
are tender. Smash a few beans against the side of the pot to test for
tenderness.
* If using a crock pot, follow manufactureras directions for cooking
beans.
Serves 12 and 226 calories and 4.5 gms of fat per A1/2 cup.
