Default Dreamy Orange Cream Puffs Recipe

For Dreamy Orange Cream Puffs
Yield: Makes 6 servings
Ingredients:
Cream Puffs (recipe follows)
3/4 cup granulated sugar
3 tablespoons cornstarch
1-1/2 cups orange juice
3 egg yolks, beaten
1 cup plain low-fat yogurt
2 tablespoons butter
1/2 teaspoon almond extract
1 can (11 ounces) mandarin oranges, drained
Powdered sugar

Preparation:
1. Prepare Cream Puffs.

2. Combine sugar, cornstarch and orange juice in medium saucepan. Cook
over medium heat until bubbly, stirring often. Cook 2 minutes; remove
from heat. Gradually stir half of hot mixture into egg yolks. Return
to saucepan; bring to a boil over medium-high heat. Reduce heat to low
and cook 2 minutes; remove from heat. Stir in yogurt, butter and
extract.

3. To serve, spoon filling into bottoms of cream puffs. Pile orange
sections on top of filling. Add cream puff tops. Lightly sift powdered
sugar over tops.


For Cream Puffs
Yield: Makes 6 cream puffs
Ingredients:
1 cup water
1/2 cup butter
1 cup all-purpose flour
1/2 teaspoon salt
4 eggs

Preparation:
1. Preheat oven to 400°F. Grease baking sheet.

2. Combine water and butter in medium saucepan; bring to a boil,
stirring until butter melts. Add flour and salt, all at once, stirring
vigorously. Cook and stir until mixture forms a ball that does not
separate. Remove from heat and cool 10 minutes. Add eggs, 1 at a time,
beating after each addition until mixture is smooth.

3. Drop heaping tablespoons of batter into 6 mounds, 3 inches apart,
onto prepared baking sheet. Bake about 35 minutes or until golden
brown and puffy. Cool slightly. Cut off tops and remove soft dough
inside. Cool completely on wire rack.
