Or, you could get a Stump's Smoker. It's gravity fed. It is an offset
smoker. The charcoal goes into a charcoal chute and gravityfeeds it down to
the firebox. Temperature control is amazing, + or - maybe 5 degrees. Add a
"Stoker" and you can get the control down to about + or - 1 degree.
