Rice Casserole
2 1/2 cups cooked rice
24 oz. sour cream
16 oz. shredded sharp cheddar cheese
1 large onion (cut up small)
2-4 Jalapeno peppers, (cut up small) remove seeds
1 can (reg. size) whole kernel corn (use 1/2 can of juice)
salt and pepper to taste
Combine all ingredients and bake uncovered for approx. 30 minutes at 350
degrees.
