"Relleno" is Spanish for "stuffed" (literally, "re-filled").
Generally, poblano chiles are stuffed with Monterey Jack cheese,
dipped in batter, and deep fried. In San Diego (on the
California/Mexico border), they're usually then dipped in enchilada
sauce and covered in melted cheese before serving, but not always.
