It might be worth trying it with Bryanna Clark Grogan's meltable vegan feta:

It really does melt - I've tried it - but it would add even more work
to the recipe, so that may cancel out any extra deliciousness (It's
work that can be done weeks ahead of time, though, and the feta is useful
for other things too.)
