Default An Egg Query

Do your scrambled eggs like this:

3 free range eggs in a glass bowl with half tsp salt and freshly
ground black pepper. Whisk with 1 tsp cold water. Add 1 tsp finely
chopped parsley (or cilentro, or basil ,or a combination).

In a shallow non-stick pan melt 1 tbsp butter and keeping the element
on low add the egg mixture. Wait until the curds begin to form and
then ever so slowly turn them until there is only a film of uncooked
egg on top. Turn the element off. Cook your toast, butter it, and
then cut into 1 inch slices.

Pile the egg mixture on top. Sprinkle with more herbs (fresh or
dried) if you wish.

This is really the very best way to cook scrambled eggs. Believe me.
