DECADENT FUDGE

300mL Pure Thick Cream
Block of Chocolate - any variety (180 - 250 gram block)
60g Butter
500g Pure Icing Sugar

Measurements must be converted for US recipe format.

Fill a sink with cold water, about an inch deep.

Mix chocolate, cream and sugar in a pot and keep mixing over a low heat
until you have a smooth creamy consistency without any lumps.

Once thoroughly mixed bring to a boil and cook until the mixture reaches a
temperature of 115°C on a cooking thermometer. Once this temperature is
reached place the pot into the cold water in the sink to stop the cooking.

Add the butter, but do not mix it. Wait half an hour until the mixture has
cooled down and then thoroughly mix until the mixture is smooth and creamy.
Then place into an 8" by 8" greased tin and place into the fridge.

A cooking thermometer is easily available anywhere. You can use any variety
of chocolate, you can use all of the Cadbury's family blocks and any of the
Nestle family blocks. Try different varieties to get a great tasting fudge
and find out which one you like the best - the rest is up to your
imagination!

But...be careful, this fudge is DECADENT and highly addictive.
