Thanks to everyone who answered. After reading here, and doing some more
research online, we went with the Traeger Deluxe with the new residential
pellet grill, for searing.

We should get them in a few weeks. Now on to looking for more recipes! I
have already run off the recipe for the spatchcock chicken, and the hints
for making a good brisket.
