Depend on what I am going to use it for.
To eat as it is (with crackers etc) I would have to say danish
"pikant-ost" it is a soft cheese with dill, paprika and some other
herb in it. It is really nice.

Being pregnant I am not allowed to eat Brie or camembert which is
cheeses I normally love.
