After being "processed" into a non-living state, and has been
set in forms representing the various shapes needed, and before
the "meat" gels, they press simulated calcium-based "bones" into
the carcass pieces. Different forms get different "bones".

Which is what makes eating KFC so fun - trying to find the 1
"breast" shape that has a "thigh bone" in it !
