Rainbow Trout with Green Onion and Ginger Mayonnaise
Makes 2 servings
Ingredients:
2 rainbow trout fillets (about 8 ounces each)
1/4 cup lime juice
1 tablespoon sesame oil
3 tablespoons quality mayonnaise
5 teaspoons green onions, thinly sliced
1 teaspoon fresh ginger, peeled and finely minced
1 teaspoon fresh lime juice
1/2 teaspoon soy sauce
1/8 teaspoon sesame oil
2 tablespoons peanut oil
1 tablespoon butter
Preparation:
Combine the 1/4 cup of lime juice and sesame oil in a bowl and whisk.
Put trout in a zip style plastic bag and pour marinade over trout.
Refrigerate for 20 minutes.
Meanwhile combine mayonnaise, onions, ginger, lime juice, soy sauce
and sesame oil in a bowl and gently whisk. Refrigerate.
Cook marinated trout in peanut oil and butter in a skillet until
lightly browned and just cooked, about 5 minutes. Serve immediately
with mayonnaise on the side.
