Oh, yes. Fat from pork lard, which was unknown in Mexican cooking

I have two tamale recipes here, one calls for 1 kilogram of corn and
200 grams of lard, the other calls for an astonishing 2 kilograms of
corn and 1 kilogram of lard...

1 gram of carbohydrate = 4 calories
1 gram of protein = 4 calories
1 gram of fat = 9 calories
1 gram of alcohol = 7 calories

In the first tamale recipe, the calorie count for just the corn and
lard is:
1000 grams of masa X 4 = 4000 calories
200 grams of fat X 9 = 1800 calories

In the second recipe, the calorie count for the same items is:
2000 grams of masa X 4 =8000 calories
1000 grams of fat X 9 = 9000 calories
