Default Irish Soda Bread

Making 10 loaves for and Irish festival and thought I would share this.

Irish Soda Bread

4 cups all-purpose flour
1/2 cup (1 stick) butter, melted
1 Tbsp butter, melted (for brushing top)
2/3 cup sugar
1 cup raisins
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 eggs, beaten
1 cups milk

Preheat oven to 350 degrees. Oven must be hot and ready when you mix in
the
liquid. In a large bowl, combine all the ingredients
except the 1 Tbsp butter; mix just until moistened. Place in a greased
9-inch round baking pan and bake for one hour or until a knife inserted in
the center comes out clean. After removing from oven, brush the top with
the 1 Tbsp melted butter. Makes 6-8 servings.
