My late usbnd loved to just eat the stalks and the round part that peeled
from the bulb(base of stalks). He used it as a great crunchy snack. I
know some poel use the feathery frond as a seasoning in salads or soups,
etc. If you cna handle clery with yoru digestive problems you most lkely
sould handle the fannel. Try a little and see how you like it and
tolerate it. It has a lovely licorice flavor raw that largely dissapates
when cooked.
