Default Sweet Potato Corn Cake

Sweet Potato Corn Cake - a recipe from Mike Muth
This is a moist, dense cake which needs no frosting. If you
decide to frost it, a caramel frosting would complement the cake.
Serves 12.
220 Calories, 31 grams net carbs, 4 grams fat per slice.

1 large sweet potato
1 1/2 cups yellow corn meal
1 cup flour
3 tsp baking powder
2 eggs, beaten
1 Tbsp butter
1/2 cup molasses
1/2 cup sugar
salt
1/4 tsp nutmeg
1/8 tsp allspice
1/4 tsp cinnamon
2 cups milk

Peel the sweet potato and cut into 1 to 1/2 " dice.
Boil in salted water until the pieces are tender.
Remove and drain.
Allow to cool until you can handle the pieces.
Cream the butter.
Mash the sweet potato in the creamed butter and set aside.
Mix all the dry ingredients.
Stir the eggs into the milk.
Combine the molasses, sweet potato, milk, and dry ingredients.
Mix well. You will have a thin batter.
Pour into a greased 9 x 13 inch pan.
Bake at 325° F for about 40 minutes.
When the cake is done, it will pull away from the sides and pass
the toothpick test.
