It's a canning facility, so they must be referring
to a retort. These are giant pressure cookers used
to sterilize the cans. Raw tuna is sealed in the cans
which are then cooked and sterilized in the retort.
A retort will be large enough for a few carts full
of cans, so it's big enough to walk into if you're
hunched over. It's hard to imagine nobody would
notice if a body was in there before you close the
door, because you wouldn't be able to fit all the
carts in.

Note that the body would have no contact with the
food from this plant because the cans are sealed
before they get to the retort.
