Caribbean Corn Soup
A healthy and rejuvenating dish to warm up those chilly nights.
4 cups of fresh kernel corn
2 tbsp. of butter/margarine
3 cups of milk
1 cup of chicken stock
1/2 tsp. of black pepper
1 tsp. of salt
1/2 cup of chopped sweet pepper
1/2 cup of onions
1/2 tsp/ of minced garlic
1. Blend corn and chicken stock and puree.
2. Melt butter/margarine.
3. Cook sweet peppers, onions and garlic in butter/margarine for a minute.
4. Add puree and simmer for 15 minutes on a low heat.
5. Add salt, pepper and milk and continue to cook for 8-12 minutes.
